Vanilla Berry Chia Pudding
During the hot summer months it’s nice to have refreshing and hydrating breakfast and snack ideas. And this is one of them: a super simple chia pudding recipe with fresh berries! This basic pudding recipe can be dressed up with whatever you like. I decided to puree fresh strawberries and raspberries because they are super delicious and in season right now. This chia pudding is as healthy and delicious as it looks!
Chia Seeds
Chia seeds are an ancient superfood. These tiny seeds are packed with fiber which helps you to stay full and satisfied, and aids digestion (no bloating!). Chia seeds contain significant amounts of omega-3 fatty acids, which are essential for optimal brain function and healthy hormone production. They also provide complete protein, as well as many antioxidants, and minerals, such as phosphorus and calcium to keep your bones strong.
Chia seeds can expand up to 10x times their weight when they are mixed with liquid to create a “pudding-like” consistency. Do not eat dry chia seeds by themselves because they expand and could cause blockage in your digestive tract! The most commonly recommended chia to liquid ratio is 1 tablespoon chia seeds to ¼ cup of liquid, OR 3-4 tablespoons of seeds to 1 cup of liquid. The chia pudding should be nice and creamy after a few hours, not liquidy. If it’s not thick enough, just add more seeds, stir well, and refrigerate a little longer.
Strawberries and Raspberries
Fresh, sweet, and beauty-promoting! Strawberries are full of antioxidants, vitamin C, and salicylic acid. Salicylic acid helps to remove dead cells from your skin and keeps your pores clean. Vitamin C supports collagen production for smoother skin, and is essential for a healthy immune system. Similarly to strawberries, raspberries are high in vitamin C, but they also contain manganese and vitamin K, which are both needed for healthy bones.
Vanilla
Vanilla has some amazing health benefits. It may have anticancer and anti-inflammatory properties. Vanilla can also promote healthy digestion and can reduce cholesterol levels. Make sure you use organic vanilla extract or powder even though it is going to be a bit more expensive. Avoid all kinds of weird artificially flavored things! Using vanilla can help you to enjoy your treats without added sugar!
Vanilla Berry Chia Pudding
SERVES 1
For the Pudding:
2 tablespoons raw, organic chia seeds
150ml (or 0.75 cup) unsweetened organic almond milk
1/3 teaspoon organic vanilla extract
Pinch of cinnamon
For The Puree:
200ml (or 0.85 cup) fresh strawberries and raspberries
Fresh lemon juice (optional)
Directions:
Combine almond milk, chia seeds, vanilla, and cinnamon in a jar. Mix well.
Cover and let rest in the refrigerator for a few hours or overnight.
When ready to serve, prepare the berry puree. Place the berries in a small bowl with lemon juice and blend with a hand blender or just mash with a fork.
In a small glass, add a layer of the chia pudding and then add a layer of pureed berries.
Top with extra berries and toppings of your choice before serving.
Notes:
The chia pudding will keep in the fridge for up to 5 days. The berry puree will keep for 2 days.
You can use any other plant-based milk you like in place of unsweetened almond milk.
