Creamy Vanilla Coconut Yogurt

Here’s a simple coconut yoghurt recipe made with probiotics. This recipe only requires three ingredients. You don’t need any fancy appliances either.

I want to share this gut-friendly recipe because our gut health affects our overall health in many ways: immune system, digestion, central nervous system, brain health, skin, and even mental health. Coconut yogurt is one of the best ways to explore with fermented foods and gut boosting probiotics. Remember that it’s not only the food that you eat but also all the other areas of life you need to have in balance for optimal gut health.

Health Benefits Of Coconuts

Coconut has several health benefits: it’s anti-bacterial and has immune-system strengthening properties. It contains lauric acid and MCTs, which can fight yeast, bacteria, and even common viruses. Despite coconut fat mainly comes in the form of saturated fat it helps the body to build healthy cholesterol. Not all cholesterol is created equal, and our bodies need cholesterol to maintain healthy hormonal balance.

I love coconut in its different forms: flakes, water, oil - the whole thing! Coconut water is super-hydrating in summer and coconut flakes tasty on top of a fruit bowl. I’m not a huge yogurt person, and coconut yogurt is the only one that I genuinely like. Unfortunately it’s not so easy to find organic coconut yoghurt without any weird additives. There are a couple of nice brands out there but they tend to be pretty expensive and not available at every store. When it comes to choosing coconut milk for this recipe remember that higher-fat coconut cream will give you thicker, richer yogurt, and lower-fat coconut milk will give you less thick yogurt. Make sure coconut and water are the only ingredients listed on a food label. If there’s any additives, look for another brand. You may need to try different brands to find your favorite milk. I used organic coconut milk with 17% fat.

Creamy Vanilla Coconut Yogurt

TOOLS

1 clean glass jar 

1 cheesecloth 

1 rubber band

1 wooden spoon 

FOR THE YOGURT

1 cup or 200ml organic coconut milk

1/4 teaspoon vanilla powder 

2 capsules probiotic powder

  1. Pour coconut milk into a clean glass jar. Empty probiotic capsules and add the powder in. Use a wooden or plastic spoon to stir until the powder is completely incorporated (a metal spoon may kill the live organisms).

  2. Cover the jar with a cheesecloth or a clean kitchen towel. Leave the yogurt at room temperature to culture 24-48 hours. The longer it rests, the thicker yogurt you will get.

  3. Sample occasionally to test the thickness. Sweeten or flavor the way you like. I like to add vanilla powder. Once fermented, it can be covered and stored in the fridge up to 1 week.

  4. Serve with your favorite fruit or granola.
